Ingredients:
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 ½ pounds carrots, peeled and chopped
1 can (13.5 oz) unsweetened coconut milk
3 cups vegetable broth
Zest and juice of 1 lime
Salt and pepper to taste
Optional: a pinch of red pepper flakes or chopped fresh cilantro for garnish
Instructions:
In a large pot, heat olive oil over medium heat. Add onion and sauté until soft (about 5 minutes).
