🍠 Recipe of the Day: Baked Sweet Potato & Cottage Cheese Bowl
This cozy dish is easy on the stomach, loaded with nutrients, and takes minimal effort—ideal for lunch, dinner, or even a filling snack!
Ingredients:
1 medium sweet potato
1/2 cup low-fat cottage cheese
A sprinkle of cinnamon or paprika (optional, depending on sweet or savory mood)
1 tsp olive oil or a small pat of butter
Pinch of salt and pepper
Optional: chopped walnuts, chives, or a drizzle of honey
Instructions:
Preheat oven to 400°F (or use the microwave for a quicker version).
Wash the sweet potato and pierce it a few times with a fork.
Bake for 45–50 minutes (or microwave on high for 5–8 minutes) until fork-tender.
Slice open the potato and fluff the inside with a fork.
Add cottage cheese on top and season as desired—with cinnamon for sweet, or pepper and chives for savory.
Add a little olive oil or butter if desired, and finish with optional toppings.
