Ingredients
For the dough:
360 ml warm milk
2 tsp instant yeast
50 g sugar
120 ml vegetable oil
250 g mashed bananas (about 2 medium)
600 g all-purpose flour (divided)
1 tsp baking powder
1 tsp salt
For the cinnamon butter filling:
115 g browned butter (or melted butter)
213 g brown sugar
2 tsp cinnamon
2 bananas, sliced
For the banana bread batter:
1 large overripe banana, mashed
30 g butter, melted
30 g vegetable oil
75 g brown sugar
1 egg
30 g yogurt
100 g flour
1/2 tsp baking powder
Pinch of salt
For the cream cheese glaze:
120 g cream cheese
50 g icing sugar
120 ml heavy cream
2 tbsp browned butter
Pinch of salt
For the top:
1 banana, sliced
Instructions
Make the dough
In a large bowl, combine warm milk, sugar, and yeast. Let sit 5 minutes until foamy. Stir in oil and mashed bananas. Add 4 cups of flour and mix until sticky. Cover and let rise 1 hour until doubled.Finish the dough
Stir in remaining flour, baking powder, and salt. Form into a soft dough.Make the filling
Mix browned butter, brown sugar, and cinnamon. Slice 2 bananas and set aside.Make the banana bread batter
Blend or mash 1 banana with butter, oil, sugar, egg, yogurt, and vanilla. Stir in flour, baking powder, and salt until smooth.Shape the buns
Preheat oven to 180°C (350°F). Grease a 9×13 pan. Roll dough into a rectangle about 12×24 inches on a floured surface. Spread cinnamon butter filling, then banana bread batter evenly. Add banana slices on top.Roll and cut
Cut dough into 12 strips. Roll each into a cinnamon bun and place in the pan. Cover and let rise 30 minutes.Bake
Bake 25 minutes until golden brown.Make the glaze and top
While baking, combine cream cheese, icing sugar, heavy cream, browned butter, and salt until smooth. Drizzle over buns when they come out of the oven and top with banana slices. Let sit 15 minutes before serving.
