Ingredients
1 large head of cauliflower, cut into florets
1 whole bulb garlic, top sliced off
2 tbsp olive oil
Salt and black pepper, to taste
1 medium onion, chopped
2 tbsp butter or olive oil
4 cups vegetable or chicken broth
1 cup Asiago cheese, grated
1/2 cup heavy cream or half-and-half
Optional garnish: fresh parsley, additional grated Asiago, bacon or roasted cauliflower florets
Instructions
Roast Cauliflower and Garlic
Preheat oven to 400°F (200°C). Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Place garlic bulb, cut side up, on a small baking sheet and drizzle with remaining olive oil. Roast cauliflower and garlic for 25–30 minutes until golden and tender.Sauté Onion
In a large pot, melt butter (or warm olive oil) over medium heat. Add chopped onion and cook 5–7 minutes until translucent.Add Broth and Cauliflower
Squeeze roasted garlic cloves out of the bulb. Add roasted garlic and cauliflower to the pot, then pour in broth. Bring to a simmer for 10 minutes.Blend the Soup
Using an immersion blender (or carefully in batches in a standard blender), purée the soup until smooth and creamy.Finish with Cheese and Cream
Return soup to low heat. Stir in grated Asiago cheese and cream. Taste and adjust salt and pepper. Heat gently until cheese melts — do not boil.Serve
Ladle into bowls and garnish with fresh parsley, extra Asiago, bacon, or a few roasted cauliflower florets for texture. Serve with crusty bread for dipping.
