Recipe of the Day: 🍋 Chicken Piccata with Lemon & Capers
A fresh, festive twist on a classic — bright lemon, fragrant herbs, and tender chicken in one pan.

Cook Time: 20 minutes
Ingredients
2 boneless, skinless chicken breasts
Salt and black pepper, to taste
⅓ cup all-purpose flour (for dredging)
2 tablespoons olive oil
2 tablespoons butter
½ cup chicken broth
¼ cup fresh lemon juice (about 1–2 lemons)
2 tablespoons capers, drained
1 teaspoon lemon zest (optional but lovely)
2 tablespoons fresh parsley, chopped
Instructions
Prepare the chicken: Slice each chicken breast in half horizontally to create thin cutlets. Season both sides with salt and pepper, then lightly dredge in flour, shaking off excess.
Cook the chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add chicken and cook for 3–4 minutes per side, until golden and cooked through. Transfer to a plate.
Make the sauce: In the same skillet, add chicken broth and lemon juice, scraping up any browned bits from the pan. Stir in capers and lemon zest, and let the sauce simmer for 3–5 minutes until slightly reduced.
Finish the dish: Return chicken to the pan and spoon sauce over the top. Add remaining tablespoon of butter and gently swirl until melted and glossy.
Serve: Sprinkle with fresh parsley and serve warm.
Serving Suggestions: Lovely with angel hair pasta, mashed potatoes, or simply alongside sautéed greens and crusty bread to soak up the sauce.
