Ingredients
2 slices whole grain or sourdough bread
1 ripe avocado
2 large eggs
1 tsp white vinegar (for poaching)
Salt and pepper, to taste
Optional toppings: red pepper flakes, microgreens, or a squeeze of lemon
Instructions
Toast the bread until golden and crisp.
Mash the avocado in a bowl and season with salt, pepper, and a squeeze of lemon if desired. Spread evenly on the toast.
Poach the eggs: Bring a small pot of water to a gentle simmer and add vinegar. Crack each egg into a small cup and carefully slide into the simmering water. Cook for 3–4 minutes until whites are set but yolks remain soft. Remove with a slotted spoon and drain on paper towels.
Assemble: Place the poached eggs on top of the avocado toast. Sprinkle with additional salt, pepper, and optional toppings. Serve immediately.
